La Victoria
Durante 27 años, Charcutería La
Victoria ha servido como un accesorio
para panes y pasteles hispanos en
Stockton, la ciudad norteña de
California, con una población estable
de casi 300,000. Hace tres décadas,
los hispanos representaban menos de
una cuarta parte de la poblacion. Hoy
día, los hispanos representan el 40%
de la población total de Stockton y
representan la demográfica principal
sobre todos los otros grupos étnicos.
Esto significa que La Victoria es
el restaurante y panadería con mayor
reconocimiento entre los hispanos
locales debido a sus famosos tamales,
panes y pasteles para toda ocasión. La
panadería vendió cientos de roscas
tradicionales en enero, y al acercase

la primavera, producen todo tipo de
panes dulces, como campechanas
crujientes.
Yoyos son otro de los favoritos
aquí. Dos piezas de pan dulce suave
se unen en el centro con glaceado y,
en La Victoria, vienen en uno de los
dos sabores: glaceado de vainilla o de
mermelada. Una vez estan glaceados,
yoyos se ruedan en virutas de coco
para crear un dulce delicioso.
Tener sabores auténticos es de
vital importancia para la Victoria
por su compromiso con las tradiciones hispanas. Carmen Torres la
proprietaria y su hija, Karina Torres,
trabajan con un equipo de cinco
panaderos, entre ellos uno exclusivo
para decorar pasteles.
BakeMark, proveedor de la
panadería La Victoria, siempre está
ahí para proporcionar apoyo técnico y
nuevas ideas de productos, manteniéndolos actualizados sobre las últimas
tendencias.
Karina Torres dice que también
están recibiendo más encomiendas de
los clientes para los panes de trigo,
ya que los clientes están mostrando
más interés en los beneficios de salud
de los panes.
Se está vendiendo donas más
a menudo, y La Victoria mantiene
al día con la demanda mediante
la producción de donas en cuatro
sabores populares: coco, virutas de
chocolate, glaseado de vainilla y
de chocolate.
También hacen las galletas de

mantequilla de maní, chocolate o
nueces. Sus galletas con trocitos
de chocolate se distinguen por una
amplia cantidad de chispas de chocolate repartidas en la parte de arriba.
Los pasteles son ordenados por
los clientes de adelanto, y pasteles de
tres leches y pasteles de limón son dos
de los tipos más solicitados.
Otro producto por la cual La
Victoria es reconocida es por sus
teleras auténticas, que se venden tanto
en la tienda al igual que distribuidas
para camiones de tacos por toda la
ciudad, donde las usan para hacer
las tortas.
La productividad de sus
empleados es bastante impresionante
teniendo en cuenta que su tienda está
abierta desde las 7 a.m. hasta las 9
p.m. todos los días de la semana. Esto
significa que el desayuno, el almuerzo
y la cena es proveeido.
“Estamos abiertos todos los días”,
dice Karina Torres. “El único día del
año que se cierra es el Año Nuevo”.
